There are three native species of coffee Cherry: Arabica (low yield, delicate, but high quality), Robusta (highest yield, easy to grow, but poor quality), and Liberica (a slowly disappearing variety).Picking coffee cherries is a hard work. Some people use machines to pick them, but most good beans need to be picked by hand, because the coffee cherries mature at different times, so the picking needs to be done several times.

It can be clearly seen in the anatomical view that the coffee bean is the middle part. The skin and pulp are removed during processing. The silver skin is also the seed coat, which will also fall off during roasting.

After the coffee beans are roasted and matured, many chemical changes occur in the beans. New substances are constantly generated, and the aromatic substances in coffee are produced at this time.
