Those Pretty Coffee Cherries
We drinks coffee, but few people have seen coffee beans, and even fewer have seen coffee cherries.Some friends say that coffee is actually a kind of juice, but I don't quite agree. Coffee is actually a drink made by extracting soluble substances from roasted coffee beans (seeds) with water. It is not the juice of coffee cherries.
Coffee planting belt
Most of the world's coffee producing areas are located in the tropical region between the Tropic of Cancer and the Tropic of Capricorn. We call it the "Coffee Belt". As a tropical cash crop, coffee trees grow in the coffee belt with excellent climatic conditions, where there is direct sunlight all year round, abundant heat and sufficient rainfall, and the annual average temperature is above 20 ℃. However, not all coffee trees can tolerate high temperatures, high humidity, and strong light. For example, some Arabica coffee trees cannot tolerate high temperatures and high humidity. They are often planted in areas with higher altitudes. If the light is too strong, they need to be shaded. 
Coffee Cherry
There are three native species of coffee Cherry: Arabica (low yield, delicate, but high quality), Robusta (highest yield, easy to grow, but poor quality), and Liberica (a slowly disappearing variety).Picking coffee cherries is a hard work. Some people use machines to pick them, but most good beans need to be picked by hand, because the coffee cherries mature at different times, so the picking needs to be done several times.
It can be clearly seen in the anatomical view that the coffee bean is the middle part. The skin and pulp are removed during processing. The silver skin is also the seed coat, which will also fall off during roasting.
After the coffee beans are roasted and matured, many chemical changes occur in the beans. New substances are constantly generated, and the aromatic substances in coffee are produced at this time.
