Why does Bourbon have So Many Colors?

Red, Pink, Yellow,Orange?The color refers to the color of the Bourbon cherry.

Red Bourbon: The original orthodox bourbon, the cherry is red when ripe. It has a sweet taste, bright acidity and a red wine flavor. In fact, after the original bourbon coffee plant blossoms, the cherry color changes from green to slightly yellow, gradually to slightly orange, and finally to mature red. In order to distinguish it from other Bourbons (Pink bourbon, Yellow bourbon, etc.), it is specially called Red bourbon.

Yellow Bourbon: A cross between red bourbon and Typica that produces yellow cherry even when fully ripe. It has a refreshing taste and a slight acidity. Yellow bourbon is a unique variety of bourbon in Sao Paulo state, Brazil, mainly because the cherry does not turn red after ripening, but shows orange yellow, so the name yellow bourbon. If yellow bourbon is planted in high altitude areas, it will have excellent flavor performance, and it has swept the "Extraordinary Cup" competition in Brazil for two consecutive years, and the top three awards are almost all won by Yellow Bourbon, which is popular in the boutique coffee industry! The flavor of yellow bourbon is usually nutty and chocolate, the acidity is balanced and smooth, the bitter feeling is weak and clean, the whole is very bright and refreshing!

Pink Bourbon: After reading the introduction of red bourbon and yellow bourbon, you can infer that pink bourbon is named because of the pink color of the ripe fruit! Pink bourbon is a combination of red bourbon and yellow bourbon and is a very rare breed. Light floral and fruity aromas with excellent flavour but low yield.

Orange Bourbon: A natural variant of the Bourbon coffee bean. The coffee fruit of orange bourbon appears orange when ripe, instead of the usual red, and this color change is due to a genetic mutation.Orange bourbon coffee often has similar characteristics to red bourbon, but tends to have a more citrus and fruity flavor. Orange bourbon is produced in relatively low quantities, making it one of the rarer coffee beans.

About 70-75% of the world's coffee beans are Arabica varieties, with bourbon and Typica being the two largest Arabica varieties. Bourbon has been called one of the most culturally and genetically important breeds. Known for its outstanding quality at high altitudes, this variety is generally cultivated at altitudes of more than 1000 meters. Bourbon has a higher yield than Typica, with a thick raspberry acidity, a creamy, delicate aroma, and a bright acidity.
