Anaerobic insolation Treatment 

Anaerobic insolation is a special method of coffee bean processing that combines anaerobic fermentation with traditional natural processing. Freshly coffee cherries are placed in sealed containers, such as stainless steel tanks. And carbon dioxide is injected to displace oxygen, allowing fermentation to occur in an oxygen-free environment. This fermentation method allows for more precise control over the pH, gas composition, humidity, and temperature during fermentation, leading to the development of richer sweetness and balanced flavors. After anaerobic fermentation, the coffee cherries are removed and subjected to natural processing. In this step, the coffee cherries are spread out in the sun to evaporate the moisture in the fruit pulp through sunlight until the target moisture content is reached.

New discovery.

Recently, I've been keen on exploring various types of coffee beans. It was my first encounter with the Yellow Bourbon variety, which has a low acidity profile and lacks strong floral notes. Dry fragrance: plums, yellow peaches, Earl Grey tea, dried fruits, with a notably sweet aroma reminiscent of fruit preserves. High temperature: apple acidity, plums, a less concentrated lemony Earl Grey, with a very soft acidity that lingers with the sweetness of dried fruits. Medium-low temperature: prunes, apples, where the sensation of acidity is slightly enhanced, but the subtle sweetness of apples still dominates, resulting in a very balanced drinking experience with an aftertaste of Earl Grey. The flavor profile is relatively simple, but the balance and cleanliness are quite good.

It's very delicious.

After medium roasting. It has a nutty, chocolatey flavor with a hint of pineapple aroma. The balance is excellent, the body is rich, the acidity is mild, there's no bitterness at medium temperature, and the aftertaste is long-lasting.

Although my roasting technique is quite amateurish, I tasted 10g right after roasting,this coffee bean is delicious, sweet, with a nutty flavor, and very enjoyable. The smoky taste brought by the silver skin had also dissipated by the next day.
