Medium Roast.Anaerobic insolation is a special method of coffee bean processing that combines anaerobic fermentation with traditional natural processing. Freshly coffee cherries are placed in sealed containers, such as stainless steel tanks. And carbon dioxide is injected to displace oxygen, allowing fermentation to occur in an oxygen-free environment. This fermentation method allows for more precise control over the pH, gas composition, humidity, and temperature during fermentation, leading to the development of richer sweetness and balanced flavors. After anaerobic fermentation, the coffee cherries are removed and subjected to natural processing. In this step, the coffee cherries are spread out in the sun to evaporate the moisture in the fruit pulp through sunlight until the target moisture content is reached.
