Medium Roast.Anaerobic insolation is a special method of coffee bean processing that combines anaerobic fermentation with traditional natural processing. Freshly coffee cherries are placed in sealed containers, such as stainless steel tanks. And carbon dioxide is injected to displace oxygen, allowing fermentation to occur in an oxygen-free environment. This fermentation method allows for more precise control over the pH, gas composition, humidity, and temperature during fermentation, leading to the development of richer sweetness and balanced flavors. After anaerobic fermentation, the coffee cherries are removed and subjected to natural processing. In this step, the coffee cherries are spread out in the sun to evaporate the moisture in the fruit pulp through sunlight until the target moisture content is reached.
Located in Lujiangba, Baoshan City, Yunnan Province, China. It is a production-type international import and export enterprise that integrates coffee cultivation, production, and sales. In November 2022, Gao Sheng Coffee Manor was selected as one of the "Yunnan Province's Specialty Coffee Manors."
The manor uses a high temperature of 218°C and 27 rigorous processes for 16 minutes of 8-stage exquisite roasting to ensure the natural and healthy quality of the coffee beans. It insists on harvesting the bright red "coffee cherries," and performs the first round of selection on the mountain to ensure the dryness and freshness of the coffee beans.

I am quite particular, and there were a few bad beans. The electronic scale is out of batteries, so I don't know the exact weight. This indirectly proves that no pesticides were used.overall, not so bad.
Just finished roasting 200g, the beans look absolutely stunning, with only a few defective beans. They are large and visually appealing. I'll let them rest for a week and then try them out before leaving a follow-up review.
Last night upon receiving, I immediately used a cast iron pan for a medium-deep roast. The next day, I brewed an espresso, which had a rich aroma and smooth crema. There were not many defective beans, with a few showing signs of insect damage. Overall:
Besides a slight bitterness and bean aroma, can also let you experience more flavors! That is what I found the Typica green beans with Anaerobic insolation treatment,
Take a moment to quiet down and savor it with your heart, and you will discover the wonderful world of coffee's taste and aroma.
In my first attempt at roasting coffee beans, the beans performed exceptionally well. I experienced the color change, the crackling sounds, the aroma, the steam, and the floating silver skins, truly capturing the essence of coffee in its purest form."
